Shrimp Patties with Citrus and Avocado Salad

A few days ago, I called home during the afternoon to say hi to John and give him an update on how my day was looking. When I have a sense of when I’m coming home, I try to remember to let him know – mostly so 8pm doesn’t jump out of my file drawer and say “hey, you should probably share your plans with the other person in your home who eats dinner so he can, you know, decide whether or not to wait for you.” 8pm can be kind of judgmental, but it always has a point.
So I called. And interrupted a process that will henceforth be called “baconing.” John and a friend were knee-deep (read: waist-deep) in making bacon logs. They found the recipe on the internet and have been dying to make it since. If you are interested, Google it. Okay, fine, here’s a picture.
You are looking at the aftermath of 7 lbs of bacon, an uncalculated quantity of peppers, onions, bratwurst, and several hours of work. You slice it like a meatloaf, suppress your gag reflex, and chow down. Well, one does. I didn’t exactly “chow” – more like “nibbled.”
Upon arriving home, I was greeted with a weak “helloooo” from the couch. An empty bottle of Pepto lay abandoned on the kitchen counter, and a dense fug of bacon filled the air. A light dinner was most definitely in order. When I asked John if I could share this story here, he said yes, so long as I didn’t describe the bacon logs as “vile.” They aren’t vile, they taste like rainbows. Rainbows made of meat and staffed by dyspeptic leprechauns.
In a recent issue of Living, I saw a recipe for shrimp burgers in pita with some sort of slaw. The patties themselves looked delicious, but I wasn’t moved by the pita or the slaw. On Erev Bacon Log, I wanted a light protein to go with a salad rather than something bready like a pita. I also wasn’t interested in the yogurt sauce Martha used to bind the shrimp mixture together. In truth, I didn’t have any appropriate yogurt – something tells me that lowfat peach chiffon would make a truly awful binding agent for shrimp.
Such is often the case with off the cuff cooking; you have some, but not all, of the ingredients you’d like and going to the store will take too much time. It’s necessary to fight this pitfall with two weapons. First, it’s important to keep a well-stocked pantry and fridge at all times; watch the pantry category here for more insight into what I recommend you keep on hand. Second, it’s equally important to learn to be able to adapt what you have laying around into something you might want to eat, even if it’s not exactly what the recipe calls for. Obviously, there are times when this is a bad idea. You can’t get too frisky with anything that involves leavening, and you generally need to maintain proportions of elements (fats, acids, bases, liquids, etc.). But that leaves a lot of room for playing.
So behold, the result of my tinkering.
Shrimp Cakes with Orange and Avocado Salad
Serves 2
12-14 large shrimp, peeled and deveined
2 T light mayonnaise
1 T seasoned breadcrumbs
1 T buttermilk
2 large oranges
1 T olive oil
½ large, ripe avocado cut into 1” pieces
1 spring onion, diced
4 large leaves romaine lettuce
Salt and pepper, to taste
Preheat the oven to 350.
Pulse approximately 1/3 of the shrimp in a food processor until a rough paste forms. Set aside.
Using a chef’s knife, chop the remaining shrimp into rough chunks, approximately ½” each. Combine the chopped shrimp with the contents of the food processor in a medium bowl. Stir in the mayonnaise, buttermilk, breadcrumbs, and a light helping of salt and pepper until fully combined.
Dampen your hands so the shrimp mixture won’t stick to you. Divide the mixture into four equal quadrants in the bowl, scooping out one quadrant at a time to make patties. Gently shape each patty and place on a parchment-lined cookie sheet. Press each patty down with your fingers or the back of a spoon to make them nice and even.
Bake the patties for 12 minutes or until they are beginning to turn golden and any liquid around the edges has firmed up.
While the patties are cooking, peel the oranges. If you want to peel them by hand, go for it. For salads, I like to make sure I’m skipping all the pith and I do it with a knife. The easy way to make this happen is to slice off each end to make two flat sides. Set it on one of them on a cutting board, and make several skinning slices with your knife as you work around the orange, following its natural shape as you go. If you are a little careful, you won’t leave much waste behind on the peel, and you’ll end up with pretty orange sides all around.
Slice your oranges into narrow disks, then into quarters and throw in a medium bowl. Add the olive oil and a generous amount of fresh ground pepper. Mix with your hands to fully coat the oranges and refrigerate.
When the patties come out of the oven, use a spatula to transfer them to a plate. If you want the outsides to be a little crisp, you can gently sear them in a non-stick pan over medium heat. While they cool slightly, wash, dry, and chop the romaine. I like mine quite thin, but go with what feels good. An easy way to get lovely, uniform ribbons from your leaves is to stack them all on top of each other, then roll up lengthwise. Holding the roll steady with one hand, use your chef’s knife to cut even ribbons perpendicular to the length of the roll.
Add the romaine, avocado, and spring onion to the orange salad and gently mix with your hands to fully dress the new elements. Portion between two plates (I use shallow pasta bowls for a dish like this) and top with your shrimp patties. Enjoy with a pale, hoppy beer or crisp white wine.
Note – this year has been incredible for oranges in California. We are inundated with the most wonderful, sweet, ruby-fleshed orbs. For this recipe, however, I wanted a little more snap to the citrus taste, so I added a squeeze of lemon to the salad before chilling the oranges. If you are using really sweet, really red oranges, I suggest you gig it a little with some stronger acid. In a pinch, a little white wine vinegar will work. You could also try the salad with grapefruit in place of oranges, but know that the stronger taste will compete a bit more with the shrimp.

Right — been using this thing for about a few months now and I keep coming back, reckon I’d chuck my thoughts in since a lad on another thread asked me a few days back. I’m UK based, mostly bet football and racing, a fiver here and there, just so you know where I’m coming from.
The reason I started using it was honestly pretty stupid — I never could get my head round what an e/w payout would be when the place terms changed. I used to just wing it and moan when the payout landed. Now I stick my stake in first, every time, even a straight one-selection punt.
The single bet calculator is the part I use most — you put in your stake, the odds and you get profit and total return instantly, fractions or decimals. It also handles the bigger stuff — acca and treble maths, lucky 15 and lucky 63, patents and yankees, which is where I always got it wrong. If you want a look, it’s here football treble bet and there’s no login wall, which I appreciated.
What really made a difference were the geekier tools. The odds-to-probability calculator that shows what margin’s baked in, and there’s the kelly tool — I run quarter kelly since full stakes are terrifying. The dutching one is decent when I’m covering two or three runners.
Not all sunshine though. The interface feels pretty plain — zero frills, which honestly I don’t mind but some will. On mobile it’s usable although the bigger tables need a bit of scrolling. Also there’s no proper app, it’s browser only — fine by me just flagging it.
Anyway. Doesn’t cost anything, barely any ads, does what it says. If anyone still adds it up in their head, try it — saves me plenty of dumb bets I’d have regretted.

So — have been messing about with this thing for about five months now and it’s basically bookmarked at this point, so thought I’d write something up since a lad on another thread asked me a few days back. I’m in the UK, mostly bet football and racing, a fiver here and there, for context.
What got me on it was genuinely embarrassing — I couldn’t ever figure out what an e/w payout actually came to when the place terms changed. I used to just eyeball it and get a shock. These days I punch the numbers in before I place anything, even a straight one-selection punt.
The single bet calculator tool is the part I’m on daily — you drop in the price and your stake and it shows profit and total return with no faffing, either odds format. There’s also the multiples — doubles and trebles maths, lucky 15 and lucky 63, a yankee, and that’s where I’d always lose track. If you fancy a poke about, it’s here free lucky 63 bet calculator and there’s no login wall, which I appreciated.
What genuinely changed how I bet is the nerdier tools. The probability calculator which shows you how much the bookie’s taking, plus a kelly calculator — I use half kelly because full kelly is a quick route to a dead bankroll. The dutching one is decent if I’m splitting a race.
Not all sunshine though. The layout looks pretty plain — no polish, which honestly I don’t mind but some will. On mobile it’s fine but the acca grid need a bit of scrolling. There’s no app, just the site — slight shame but worth saying.
Anyway. Free, not plastered in adverts, works. Anyone who honestly works out returns on a calculator app, try it — it’s saved me a load of “wait, that’s it?” moments.
So — been on this thing for something like five months now and I keep coming back, so thought I’d say something since a lad on another thread asked me a few days back. Am based in the UK, mostly stick to footie and the horses, small stakes, so take it how you like.
The reason I started using it was honestly pretty stupid — I could never work out what an each way payout actually came to with 1/5 odds a place. I’d just eyeball it and then be surprised. Now I stick my stake in before I place anything, even the boring singles.
Their single bet calculator tool is the part I use most — you put in stake and odds and you get the return instantly, fractional or decimal, doesn’t matter. There’s also the bigger stuff — acca and treble maths, lucky 15s, yankees, honestly that’s where I’d always lose track. If you fancy a poke about, it’s over at matched betting finder — free, no signup.
What genuinely made a difference was the more serious bits. There’s an odds-to-probability calculator and it makes obvious the overround, and there’s the kelly staking tool — I stick to fractional kelly since full stakes are far too aggressive. The dutching one is decent for when I’m spreading across selections.
It’s not perfect mind. The design looks a bit basic — no flash, looks like it was built by someone who cares more about maths than colours. On mobile it works but the lucky 63 breakdown make you pinch and zoom. Also there’s no proper app, it’s a website and that’s it — doesn’t bother me but worth saying.
Anyway. Free, not plastered in adverts, does the job. Anyone who even now works out returns on a calculator app, give it a go — it’s saved me a fair few “wait, that’s it?” moments.

The single bet calculator is the bit I open most — you drop in your stake, the odds and it shows returns with no faffing, fractional or decimal, doesn’t matter. Same tool covers the multiples — trebles maths, lucky 15s, yankees, honestly that’s where I always lose track. If you fancy a poke about, it’s over at online matched betting calculator — free, no signup.
What really changed how I bet is the more serious bits. They’ve got an implied probability thing which shows you the overround, and a kelly calculator — I run quarter kelly since full stakes are far too aggressive. The dutching one gets used a fair bit when I’m splitting a race.
Couple of gripes. The layout is very functional, let’s say — no frills, it’s clearly function over form. Phone-wise it works though the lucky 63 breakdown need a bit of scrolling. Also there’s nothing on the app store, just the site — slight shame but worth saying.
Right, that’s me. Free, not plastered in adverts, does the job. If anyone still adds it up in their head, try it — it’s saved me a load of arguments with the bookie.

OK — been on this thing for about a few months now and I keep coming back, so figured I’d write something up since a lad on another thread asked me last week. I’m based in the UK, mostly bet football and racing, nothing mad, so take it how you like.
The reason I started using it was genuinely pretty stupid — I never could work out what an e/w payout actually came to with 1/5 odds a place. I used to just guess and get a shock. Now I stick my stake in first, every time, even a straight one-selection punt.
Their single bet calculator is the bit I’m on daily — type in stake and odds and you get returns straight away, fractions or decimals. There’s also the bigger stuff — trebles maths, a lucky 15, yankees, and that’s where most people I know got it wrong. If you want a look, it lives at lucky 63 rechner and it’s free with no account nonsense.
One thing that really shifted things for me is the more serious tools. They’ve got an odds-to-probability thing and it makes obvious what margin’s baked in, plus a kelly staking tool — I use half kelly as the full version is terrifying. The dutch tool is decent for when I’m spreading across selections.
It’s not perfect mind. The design looks very functional, let’s say — zero frills, which honestly I don’t mind but some will. On mobile it’s fine although the bigger tables are a squeeze. Also there’s no proper app, it’s browser only — fine by me but worth saying.
So yeah. Doesn’t cost anything, barely any ads, works. If anyone still adds it up in their head, have a look — it’s saved me a fair few dumb bets I’d have regretted.
OK — have been messing about with this thing for something like five months now and it’s basically bookmarked at this point, reckon I’d write something up since a mate asked me last week. Am based in the UK, mostly do football and horses, a fiver here and there, just so you know where I’m coming from.
How I found it was actually a bit daft — I never could work out what an each way return actually came to with 1/5 odds a place. Basically I’d eyeball it and then be surprised. These days I stick my stake in before every slip, even a straight one-selection punt.
The single bet calculator is the part I use most — you put in your stake, the odds and it spits out profit and total return instantly, fractions or decimals. Same tool covers the multiples — acca and treble returns, lucky 15s, a yankee, which is where I’d always lose track. If you want a look, it lives at matched bets calculator and it’s free with no account nonsense.
What actually changed how I bet was the geekier bits. The odds-to-probability converter and it makes obvious what margin’s baked in, and a kelly calculator — I stick to fractional kelly since full stakes are a quick route to a dead bankroll. The dutching one is decent when I’m splitting a race.
Couple of gripes. The design looks pretty plain — zero polish, it’s clearly function over form. On my phone it works but the acca grid need a bit of scrolling. And no proper app, it’s browser only — doesn’t bother me but you asked.
Anyway. Doesn’t cost anything, no ads shoved in your face, works. If you still does the maths on paper, have a look — it’s saved me a fair few “wait, that’s it?” moments.
Right — been on this thing for maybe six months now and it’s stuck on my phone, so thought I’d say something since someone asked me last week. I’m in the UK, mainly do football and horses, nothing mad, just so you know where I’m coming from.
How I found it was genuinely embarrassing — I could never get my head round what an e/w payout actually was when the place terms changed. I used to just wing it and moan when the payout landed. These days I stick my stake in before every slip, even the boring singles.

Yo tiro mucho de Book of Dead y Gates of Olympus, aunque tambien le he dado a alguna de Microgaming.

Mis habituales son Book of Dead y Gates of Olympus, eso si tambien le he dado a cosas de Big Time Gaming.

OK — been using this thing for maybe five months now and it’s basically bookmarked at this point, so thought I’d chuck my thoughts in since someone asked me a few days back. Am UK based, generally do football and horses, nothing mad, for context.

The single bet calculator tool is the part I use most — type in stake and odds and it shows returns instantly, either odds format. It also handles the fiddly ones — trebles returns, lucky 15 and lucky 63, patents and yankees, honestly that’s where most people I know got it wrong. Have a go yourself, it lives at doubles accumulator — free, no signup.
What actually changed how I bet were the nerdier bits. There’s an probability thing which shows you what margin’s baked in, plus a kelly staking calculator — I use half kelly because full kelly is a quick route to a dead bankroll. The dutching one is decent for when I’m spreading across selections.
Not all sunshine though. The design feels pretty plain — not much flash, it’s clearly function over form. On mobile it’s usable though the acca grid make you pinch and zoom. Also there’s nothing on the app store, just the site — doesn’t bother me but worth saying.
Right, that’s me. Costs nowt, no ads shoved in your face, works. Anyone who still works out returns on a calculator app, have a look — saved me plenty of dumb bets I’d have regretted.
Yo me quedo en Book of Dead y Gates of Olympus, aunque he tocado tambien alguna de Microgaming.
