Fast As You Can | Easy Artichoke Pesto
Posted by Bria under Main Dishes, Pantry and Equipment

I confess that I do not always feel extremely excited about cooking when I get home late. But late or not, I’m usually excited about eating. I always keep some kind of pasta – fresh or dried – on hand because it makes a fast, filling meal in a pinch (and, to be fair, my dad’s family is Italian and I will always think of pasta as comfort food). There are more or less 15 minutes built in to every pasta preparation, between readying the water and cooking the pasta itself. Recently, I started marking the prep time for other parts of the meal in relation to the time it takes the pasta to cook. That is, I know I’ve got something really fast in my sights when I can safely say “you can make [whatever it is] before the pasta it goes with has had a chance to cook!”
You can make this artichoke pesto before the pasta it goes with has had a chance to cook! See? Neat.
Honest to goodness, I threw together this little saucey wonder a few weeks ago after getting home sometime north of 9 p.m., weary and belly a’growling. It was absolutely delicious, especially when garnished with a few sliced campari tomatoes. Artichoke recipes generally garner favor with me, but this one brings something special to the table (oh, ouch, that one even hurts to type).
Kindly note, this type of pesto is not cooked or heated before it is added to the pasta. The residual heat from the noodles will warm it up just fine. I suppose, if you want to get technical, this isn’t so much cooking as mixing.
On the mixing – you will notice that I recommend a food processor. After owning one for a few years, I must say that it’s one of two kitchen electrics I deem critical to a well-functioning kitchen (the other being some form of electric mixer). There are many, many things, this sauce included, that you can throw together with the most minimal effort if you can get your hands on a food processor. Honestly, there are things I make now that I never bothered with in my pre-food processor days because they are simply too much trouble. Anything that involves cutting fat into flour (biscuits, pastry dough, pie crust, etc.) is a great example – takes several minutes by hand versus a few seconds by processor. I have a fantastic 7-cup model by Cuisinart, which I think is worth every penny (currently $99.95 at Amazon), and there are even less expensive models out there. Hands down, it’s the kitchen electric I use most.
In addition to pasta, this sauce tastes fantastic on toasted artisan bread or crackers. I also pulled off a lovely cold salad for lunch one day by mixing a few heaping spoonfuls of the pesto into a can of tuna and topping with avocados and tomatoes. The brightness of the artichoke and the tang of the lemon-garlic flavors complemented the tuna nicely.

Artichoke Pesto
Makes enough for 4 bowls of pasta, give or take, assuming you use a few heaping tablespoons per serving
Ingredients
1 can artichoke hearts (I prefer those packed in water and not marinated, but suit yourself)
2 cloves of garlic
½ cup olive oil
Juice from one hearty squeeze of half a lemon
Salt and pepper to taste
4 or 5 mint leaves (optional)
Equipment
Food processor (a blender will also work, though not as well)
Rundown
- Peel the garlic
- Blitz artichokes and garlic
- Add the olive oil
- Blitz until combined
- Season as needed
Drain the artichoke hearts and add the contents of the can to your food processor. Peel the garlic and add the cloves to the processor bowl. Blitz the hearts and garlic together for 2 or 3 seconds until the artichokes are roughly shredded.
If your food processor has the capability to allow you to drizzle in liquid while the unit is turned on, do so here – turn it on (as opposed to the pulse setting) and slowly add the olive oil until the whole mixture is combined. If your food processor wasn’t designed that way (namely meaning it doesn’t have a little piece of the lid you can take out while the thing is running), add the oil in 2 or 3 additions.
Squeeze in the lemon juice and add a bit of salt and pepper. Blitz once more to combine and taste; adjust the seasonings as needed. If you are adding the mint leaves, toss them in here and blitz a few times until everything is well-combined, but not smooth like a smoothie.
To serve:
- Stir a few spoonfuls of pesto into a bowl of hot pasta; garnish with sliced tomatoes and parsley
- Mix well with a can of drained tuna and garnish with tomatoes and avocado slices
- Spread thinly on toasted slices of baguette, artisan bread, or light crackers
- Scoop with your favorite chip
- Lick off your sneaky index finger

Been playing at Revery Play for like a couple of months and wanted to give my two cents on this. Signed up one evening out of boredom — minimum deposit was ?10 which seemed fair, threw in ?50 to start and got a 100% welcome bonus up to ?500 plus 200 free spins. The rollover’s 35x which could be better honestly but I’ve seen way worse.
Game-wise actually surprised me — Revery Play has somewhere around 3000 titles from devs like Play’n GO, NetEnt, Big Time Gaming. Spent most of my time on Gates of Olympus mostly — pulled a nice win on Book of Dead recently. The live dealer stuff runs on Evolution — Crazy Time is great fun, streams are smooth.
What I like at Revery Play is the cashout speed. I use Neteller and last cashout landed in less than a day. There’s also Mastercard plus other e-wallets if that’s your thing. I’d have a look at what’s available on reveryplay before you sign up.
Now, it’s not all perfect. Customer support at Revery Play isn’t the fastest — I waited nearly 20 minutes before someone replied. And the mobile site is decent enough but it feels a bit clunky next to some competitors. No dedicated app either, just the browser version.
Still, I’m still playing there so that says something. The site is licensed and seems legit. For UK players it’s a solid shout — only don’t expect the support response times.
Been using Revery Play for roughly two months now and wanted to give my two cents here. Signed up on a whim — min deposit is ?10 which suited me fine, threw in ?50 to start and got a matched deposit bonus up to 500 quid and 200 free spins. Playthrough sits at 35x and isn’t the lowest I’ve seen but manageable if you stick to slots.
Game selection is pretty stacked — Revery Play has over 3000 titles from studios including Play’n GO, NetEnt, Big Time Gaming. I’ve been smashing Gates of Olympus a lot — pulled a nice win on Book of Dead recently. Live tables is all Evolution — Crazy Time is addictive honestly, proper dealers streaming in HD.
What I appreciate about Revery Play is how quick withdrawals are. Paying with Skrill and my withdrawal came through within less than a day. They also take Bitcoin and other e-wallets for those who prefer it. You can have a look at the current promotions on revery play before you sign up.
That said, not everything is amazing. Customer support at Revery Play can be a bit slow — had to wait nearly 20 minutes for live chat one evening. Also the site on my phone works fine but it feels a bit clunky compared to other sites I use. No dedicated app either, you just use the mobile browser.
Still, it hasn’t put me off so that says something. Revery Play is properly licensed and I haven’t had any dodgy issues. For UK players it’s a decent option — I’d just temper expectations on the support response times.

Been messing around on Revery Play for about a couple of months and thought I’d give my two cents on this. Signed up on a whim — min deposit is only ?10 which seemed fair, deposited fifty quid and they matched with a matched deposit bonus up to ?500 plus 200 free spins. The rollover’s 40x which could be better honestly but I’ve seen way worse.
The lobby is pretty stacked — Revery Play has somewhere around 2500 games from providers like Play’n GO, NetEnt, Big Time Gaming. I’ve been smashing Gates of Olympus mostly — had a solid session on Book of Dead recently. Live tables runs on Evolution — the game shows are great fun, proper dealers streaming in HD.
The bit that sold me on Revery Play is the cashout speed. Paying with Skrill and my withdrawal hit my account in less than a day. They also take Bitcoin and various e-wallets which is handy. I’d check out what’s available on reveryplay if you’re interested.
That said, not everything is amazing. Customer support at Revery Play took ages once — I waited nearly 20 minutes on chat the other day. The site on my phone runs okay though it feels a bit clunky next to some competitors. There’s no app as such, you just use the mobile browser.
Having said all that, it hasn’t put me off so make of that what you will. The site is properly licensed and feels trustworthy enough. Being UK-based it’s a solid shout — only temper expectations on live chat wait times.
Been using Revery Play for like two months now and figured I’d give my two cents on this. I registered one evening out of boredom — min deposit is ?10 which wasn’t bad, deposited ?30 to test it and they matched with a matched deposit bonus up to 500 quid and 150 free spins on registration. Wagering is 40x which isn’t the lowest I’ve seen but manageable if you stick to slots.
Game-wise is genuinely solid — there’s roughly 2500 games from studios including Play’n GO, NetEnt, Yggdrasil. I’ve been smashing Book of Dead mainly — had a solid session on Sweet Bonanza the other night. The live dealer stuff runs on Evolution — Lightning Roulette is great fun, proper dealers streaming in HD.
What I appreciate about Revery Play is how quick withdrawals are. Paying with Skrill and the payout came through within less than a day. They also take Mastercard plus various e-wallets if that’s your thing. I’d browse what’s available on revery play before you sign up.
Tbh, it’s not all perfect. Live chat at Revery Play isn’t the fastest — had to wait like 15 minutes for live chat one evening. The site on my phone runs okay though it feels a bit clunky next to bigger brands. No dedicated app either, it’s browser-only on mobile.
Still, it hasn’t put me off so make of that what you will. Revery Play is licensed and I haven’t had any dodgy issues. For UK players it’s a solid shout — only be patient with the support response times.
So I’ve been messing around on Revery Play for roughly six weeks or so and wanted to give my two cents here. I registered after seeing an ad — min deposit is ?10 which wasn’t bad, deposited ?30 to test it and got a 100% welcome bonus up to ?500 and 150 free spins on registration. The rollover’s 35x which could be better honestly but manageable if you stick to slots.
The lobby is genuinely solid — they’ve got somewhere around 3000 slots and table games from providers like Pragmatic Play, NetEnt and Big Time Gaming. Been grinding Book of Dead mainly — pulled a nice win on Book of Dead recently. The live dealer stuff is all Evolution — the game shows are addictive honestly, streams are smooth.
What I appreciate about Revery Play is how quick withdrawals are. I use Skrill and my withdrawal hit my account in about 18 hours. You can also use crypto and various e-wallets if that’s your thing. You can check out what’s available over at reveryplay before you sign up.
Tbh, not everything is amazing. Their support at Revery Play can be a bit slow — was sitting there a good while on chat the other day. And the site on my phone is decent enough but navigation could be smoother next to bigger brands. No standalone app, you just use the mobile browser.
Still, I’m still playing there which says enough really. Revery Play is properly licensed and seems legit. Being UK-based this is a reasonable pick — only be patient with live chat wait times.

Playthrough sits at 40x which is pretty standard but not terrible either.
Game-wise is pretty stacked — there’s over 2500 games from providers like Play’n GO, NetEnt, Betsoft. Spent most of my time on Sweet Bonanza a lot — hit a decent 400x on Gates last week actually. Live tables is powered by Evolution — the game shows are always packed, real croupiers and everything.

L’assistenza clienti risponde abbastanza in fretta.

Ci gioco volentieri e continuo a tornare.
