Fast As You Can | Easy Artichoke Pesto
Posted by Bria under Main Dishes, Pantry and Equipment

I confess that I do not always feel extremely excited about cooking when I get home late. But late or not, I’m usually excited about eating. I always keep some kind of pasta – fresh or dried – on hand because it makes a fast, filling meal in a pinch (and, to be fair, my dad’s family is Italian and I will always think of pasta as comfort food). There are more or less 15 minutes built in to every pasta preparation, between readying the water and cooking the pasta itself. Recently, I started marking the prep time for other parts of the meal in relation to the time it takes the pasta to cook. That is, I know I’ve got something really fast in my sights when I can safely say “you can make [whatever it is] before the pasta it goes with has had a chance to cook!”
You can make this artichoke pesto before the pasta it goes with has had a chance to cook! See? Neat.
Honest to goodness, I threw together this little saucey wonder a few weeks ago after getting home sometime north of 9 p.m., weary and belly a’growling. It was absolutely delicious, especially when garnished with a few sliced campari tomatoes. Artichoke recipes generally garner favor with me, but this one brings something special to the table (oh, ouch, that one even hurts to type).
Kindly note, this type of pesto is not cooked or heated before it is added to the pasta. The residual heat from the noodles will warm it up just fine. I suppose, if you want to get technical, this isn’t so much cooking as mixing.
On the mixing – you will notice that I recommend a food processor. After owning one for a few years, I must say that it’s one of two kitchen electrics I deem critical to a well-functioning kitchen (the other being some form of electric mixer). There are many, many things, this sauce included, that you can throw together with the most minimal effort if you can get your hands on a food processor. Honestly, there are things I make now that I never bothered with in my pre-food processor days because they are simply too much trouble. Anything that involves cutting fat into flour (biscuits, pastry dough, pie crust, etc.) is a great example – takes several minutes by hand versus a few seconds by processor. I have a fantastic 7-cup model by Cuisinart, which I think is worth every penny (currently $99.95 at Amazon), and there are even less expensive models out there. Hands down, it’s the kitchen electric I use most.
In addition to pasta, this sauce tastes fantastic on toasted artisan bread or crackers. I also pulled off a lovely cold salad for lunch one day by mixing a few heaping spoonfuls of the pesto into a can of tuna and topping with avocados and tomatoes. The brightness of the artichoke and the tang of the lemon-garlic flavors complemented the tuna nicely.

Artichoke Pesto
Makes enough for 4 bowls of pasta, give or take, assuming you use a few heaping tablespoons per serving
Ingredients
1 can artichoke hearts (I prefer those packed in water and not marinated, but suit yourself)
2 cloves of garlic
½ cup olive oil
Juice from one hearty squeeze of half a lemon
Salt and pepper to taste
4 or 5 mint leaves (optional)
Equipment
Food processor (a blender will also work, though not as well)
Rundown
- Peel the garlic
- Blitz artichokes and garlic
- Add the olive oil
- Blitz until combined
- Season as needed
Drain the artichoke hearts and add the contents of the can to your food processor. Peel the garlic and add the cloves to the processor bowl. Blitz the hearts and garlic together for 2 or 3 seconds until the artichokes are roughly shredded.
If your food processor has the capability to allow you to drizzle in liquid while the unit is turned on, do so here – turn it on (as opposed to the pulse setting) and slowly add the olive oil until the whole mixture is combined. If your food processor wasn’t designed that way (namely meaning it doesn’t have a little piece of the lid you can take out while the thing is running), add the oil in 2 or 3 additions.
Squeeze in the lemon juice and add a bit of salt and pepper. Blitz once more to combine and taste; adjust the seasonings as needed. If you are adding the mint leaves, toss them in here and blitz a few times until everything is well-combined, but not smooth like a smoothie.
To serve:
- Stir a few spoonfuls of pesto into a bowl of hot pasta; garnish with sliced tomatoes and parsley
- Mix well with a can of drained tuna and garnish with tomatoes and avocado slices
- Spread thinly on toasted slices of baguette, artisan bread, or light crackers
- Scoop with your favorite chip
- Lick off your sneaky index finger

Been using Single Bet Calculator for about four months now, mostly late at night on the sofa, so this is just my two pence. Stumbled on it through a mate, not an ad.
The lobby is pretty big — around 2,500 titles last time I counted. NetEnt is everywhere, so Gates of Olympus and the rest of the greatest hits are all there. Personally I mainly play Big Time Gaming megaways since the maths feels fairer to me. The one thing that irks me — the search function on Single Bet Calculator is a bit rubbish, I usually just scroll and hope.
Live tables are almost entirely Evolution, which is fine by me. Real croupiers, decent stream quality, and Crazy Time is where I lose most of my money, honestly. Should mention the British tables are properly staffed in the evenings. If you’re weighing up the promos have a look at single bet since the offers shift about.
The sign-up deal on Single Bet Calculator is 100% up to ?200 plus 100 free spins. Rollover is 35x which is standard-ish. They also ran a small no deposit thing on verification. Min deposit is ?10, registration was quick, verification took about 24 hours.
Payouts have been fine. Visa and Mastercard are the slow ones, e-wallets were same-day for me, and crypto clears fastest. Cashed out ?340 last week with no drama. Support at Single Bet Calculator was on me within five minutes — copy-paste at first but fine after. Properly licensed for UK players, which is the bit I actually check. There’s no app on the Play Store, which is mildly annoying but the site works fine.
Been signed up at Single Bet Calculator since the spring, mainly on mobile, so take this for what it’s worth. Came across it through a Reddit thread, nobody paid me.
The lobby is frankly enormous — roughly 4,000 slots last time I counted. Pragmatic Play takes up most of the space, so Gates of Olympus and all the standards are all there. I mostly stick to Play’n GO titles because the volatility suits me. One gripe — the search function on Single Bet Calculator is a bit rubbish, filters half work.
Live tables are almost entirely Evolution, so you know what you’re getting. Real croupiers, the stream holds up on 4G, and Crazy Time and Lightning Roulette is rammed on a Friday. Worth saying the UK side is well covered in the evenings. Before you deposit anything have a look at Lucky 15 Bet Calculator Security Guide instead of trusting a random forum post.
Bonus-wise from Single Bet Calculator came as a 100% match to ?150 with 50 spins. Playthrough sits at 35x nothing special but not predatory. They also ran a small no deposit thing on verification. Minimum is a tenner, the form was short enough, verification took about 24 hours.
Payouts are decent. Card payments take 2-3 days, e-wallets came through in under 12 hours, and Bitcoin clears fastest. Cashed out ?340 last week with no drama. The live chat on Single Bet Calculator answered in about four minutes — human, not a bot script. Licence is UKGC, which matters more than the bonus size. No standalone app, which is mildly annoying but the site works fine.
Been using Single Bet Calculator since around February, mostly late at night on the sofa, so make of that what you will. Came across it after a mate mentioned it, nobody paid me.
The slots side is pretty big — around 2,500 titles according to the filter counts. Pragmatic Play takes up most of the space, so Gates of Olympus and the usual suspects are present and correct. Personally I mainly play Betsoft games because the volatility suits me. One gripe — the search function on Single Bet Calculator is a bit rubbish, filters half work.
The live dealer bit is Evolution-run, so you know what you’re getting. Actual dealers, no lag issues on my broadband, and the game shows like Crazy Time pulls a big crowd most evenings. Should mention the British side is well covered from about 6pm onwards. If you want to compare the current terms have a look over on single bet calculator free rather than taking my word for it.
The sign-up deal on Single Bet Calculator is 100% up to ?200 plus 100 free spins. Rollover is 30x which is about par these days. I also got 20 no deposit spins when I registered. Min deposit is ?10, sign-up took me maybe five minutes, KYC took a day.
Cashouts are decent. Visa and Mastercard take 2-3 days, e-wallets were same-day for me, and crypto clears fastest. Took out about ?250 recently with no drama. The live chat on Single Bet Calculator took ten minutes once, three another time — human, not a bot script. Licence is UKGC, which matters more than the bonus size. App-wise there’s nothing, which is mildly annoying but the site works fine.
I’ve been on Single Bet Calculator since around February, mainly on mobile, so make of that what you will. Stumbled on it through a mate, nobody paid me.
The lobby is pretty big — somewhere north of 3,000 titles if the counter is honest. NetEnt stuff dominates, so Book of Dead and all the standards are present and correct. Personally I mainly play Betsoft games because the volatility suits me. Small annoyance — Single Bet Calculator’s search bar is genuinely poor, you often have to scroll.

Payouts have been the best part. Debit card land in a couple of days, Skrill and Neteller came through in under 12 hours, and Bitcoin clears fastest. Cashed out ?340 last week no silly document requests. Single Bet Calculator’s support answered in about four minutes — human, not a bot script. The game selection is genuinely huge — a bit over 3,500 slots last time I counted. Play’n GO is everywhere, so Gates of Olympus and all the standards all show up. I mostly stick to Big Time Gaming megaways because the volatility suits me. One gripe — Single Bet Calculator’s search bar is genuinely poor, you often have to scroll.
