Shrimp Patties with Citrus and Avocado Salad

A few days ago, I called home during the afternoon to say hi to John and give him an update on how my day was looking. When I have a sense of when I’m coming home, I try to remember to let him know – mostly so 8pm doesn’t jump out of my file drawer and say “hey, you should probably share your plans with the other person in your home who eats dinner so he can, you know, decide whether or not to wait for you.” 8pm can be kind of judgmental, but it always has a point.
So I called. And interrupted a process that will henceforth be called “baconing.” John and a friend were knee-deep (read: waist-deep) in making bacon logs. They found the recipe on the internet and have been dying to make it since. If you are interested, Google it. Okay, fine, here’s a picture.
You are looking at the aftermath of 7 lbs of bacon, an uncalculated quantity of peppers, onions, bratwurst, and several hours of work. You slice it like a meatloaf, suppress your gag reflex, and chow down. Well, one does. I didn’t exactly “chow” – more like “nibbled.”
Upon arriving home, I was greeted with a weak “helloooo” from the couch. An empty bottle of Pepto lay abandoned on the kitchen counter, and a dense fug of bacon filled the air. A light dinner was most definitely in order. When I asked John if I could share this story here, he said yes, so long as I didn’t describe the bacon logs as “vile.” They aren’t vile, they taste like rainbows. Rainbows made of meat and staffed by dyspeptic leprechauns.
In a recent issue of Living, I saw a recipe for shrimp burgers in pita with some sort of slaw. The patties themselves looked delicious, but I wasn’t moved by the pita or the slaw. On Erev Bacon Log, I wanted a light protein to go with a salad rather than something bready like a pita. I also wasn’t interested in the yogurt sauce Martha used to bind the shrimp mixture together. In truth, I didn’t have any appropriate yogurt – something tells me that lowfat peach chiffon would make a truly awful binding agent for shrimp.
Such is often the case with off the cuff cooking; you have some, but not all, of the ingredients you’d like and going to the store will take too much time. It’s necessary to fight this pitfall with two weapons. First, it’s important to keep a well-stocked pantry and fridge at all times; watch the pantry category here for more insight into what I recommend you keep on hand. Second, it’s equally important to learn to be able to adapt what you have laying around into something you might want to eat, even if it’s not exactly what the recipe calls for. Obviously, there are times when this is a bad idea. You can’t get too frisky with anything that involves leavening, and you generally need to maintain proportions of elements (fats, acids, bases, liquids, etc.). But that leaves a lot of room for playing.
So behold, the result of my tinkering.
Shrimp Cakes with Orange and Avocado Salad
Serves 2
12-14 large shrimp, peeled and deveined
2 T light mayonnaise
1 T seasoned breadcrumbs
1 T buttermilk
2 large oranges
1 T olive oil
½ large, ripe avocado cut into 1” pieces
1 spring onion, diced
4 large leaves romaine lettuce
Salt and pepper, to taste
Preheat the oven to 350.
Pulse approximately 1/3 of the shrimp in a food processor until a rough paste forms. Set aside.
Using a chef’s knife, chop the remaining shrimp into rough chunks, approximately ½” each. Combine the chopped shrimp with the contents of the food processor in a medium bowl. Stir in the mayonnaise, buttermilk, breadcrumbs, and a light helping of salt and pepper until fully combined.
Dampen your hands so the shrimp mixture won’t stick to you. Divide the mixture into four equal quadrants in the bowl, scooping out one quadrant at a time to make patties. Gently shape each patty and place on a parchment-lined cookie sheet. Press each patty down with your fingers or the back of a spoon to make them nice and even.
Bake the patties for 12 minutes or until they are beginning to turn golden and any liquid around the edges has firmed up.
While the patties are cooking, peel the oranges. If you want to peel them by hand, go for it. For salads, I like to make sure I’m skipping all the pith and I do it with a knife. The easy way to make this happen is to slice off each end to make two flat sides. Set it on one of them on a cutting board, and make several skinning slices with your knife as you work around the orange, following its natural shape as you go. If you are a little careful, you won’t leave much waste behind on the peel, and you’ll end up with pretty orange sides all around.
Slice your oranges into narrow disks, then into quarters and throw in a medium bowl. Add the olive oil and a generous amount of fresh ground pepper. Mix with your hands to fully coat the oranges and refrigerate.
When the patties come out of the oven, use a spatula to transfer them to a plate. If you want the outsides to be a little crisp, you can gently sear them in a non-stick pan over medium heat. While they cool slightly, wash, dry, and chop the romaine. I like mine quite thin, but go with what feels good. An easy way to get lovely, uniform ribbons from your leaves is to stack them all on top of each other, then roll up lengthwise. Holding the roll steady with one hand, use your chef’s knife to cut even ribbons perpendicular to the length of the roll.
Add the romaine, avocado, and spring onion to the orange salad and gently mix with your hands to fully dress the new elements. Portion between two plates (I use shallow pasta bowls for a dish like this) and top with your shrimp patties. Enjoy with a pale, hoppy beer or crisp white wine.
Note – this year has been incredible for oranges in California. We are inundated with the most wonderful, sweet, ruby-fleshed orbs. For this recipe, however, I wanted a little more snap to the citrus taste, so I added a squeeze of lemon to the salad before chilling the oranges. If you are using really sweet, really red oranges, I suggest you gig it a little with some stronger acid. In a pinch, a little white wine vinegar will work. You could also try the salad with grapefruit in place of oranges, but know that the stronger taste will compete a bit more with the shrimp.

Signed up at this platform for a few months now, so I have had enough time to form a real opinion. A friend recommended it for the lotto products, but ended up staying for the casino as well. The Lottoland catalogue is surprisingly large, with both lottery products and a full casino lobby.
Providers on the casino side include Pragmatic Play, NetEnt, Evolution and Nolimit City. Sweet Bonanza and Gonzo’s Quest sit in the popular section, although it does not compete with dedicated casino platforms on volume. Where Lottoland genuinely stands out is the lottery betting: you can bet on the outcome of dozens of international lotteries, including some enormous jackpot pools. There are also scratch cards and instant win games.
The welcome offer here varies by region: often a free bet plus some bonus funds. Casino bonuses appear occasionally, although the lotto side gets more attention. Latest offers and any active codes can be found at lottoland casino before you sign up. Wagering terms on casino bonuses sit around 30 to 40x.
The deposit floor is friendly: lottery entries start from a pound. Payment methods include cards, PayPal and prepaid options. PayPal payouts landed quickly, bank transfers ran the usual few days. KYC was quick — uploaded a driving licence and a bank statement, done in a few hours.
There is a proper app for phone and tablet, and the interface is clean. Results come through live in the app, with the casino accessible from the same app. Support is available via live chat and email, response times are reasonable. Dual licensed, Gibraltar and UK, so there is genuine oversight. Worth considering if the lottery side interests you.
I have been using Lottoland since the start of summer, so the honeymoon phase is well behind me. A friend recommended it for the lotto products, but ended up staying for the casino as well. The gaming section goes deeper than you would think, combining lotto draws with slots and table games.
The casino side runs on games from Pragmatic Play, NetEnt, Play’n GO and Blueprint. The top titles are easy to find, though the total count is lower than a standalone casino. What makes it different is the lotto side: results from lotteries around the world are covered, with jackpots sometimes exceeding a billion. Instant win titles round things off.
The welcome offer here depends on where you are: typically a discounted first bet on a lottery draw. The casino side gets its own promotions from time to time, though the lottery promos are more frequent. Current promotions and terms are worth checking on lottoland since they rotate regularly. Wagering terms on casino bonuses sit around 30 to 40x.
Minimum deposit is low: one pound for lottery bets, ten for casino. Payment methods include cards, PayPal and prepaid options. Cashouts via e-wallet took under twenty-four hours, bank transfers ran the usual few days. Verification was straightforward — ID check passed on the first attempt.
There is a proper app for phone and tablet, which is well designed and runs smoothly. Draw results appear as they happen, with the casino accessible from the same app. The help team is reachable through live chat, wait times are short. Dual licensed, Gibraltar and UK, meaning real consumer protection. A reliable option for lottery and light casino play.

Been playing on this platform since the start of summer, enough sessions to see how it actually works. I found it because of the lottery betting, though the slots pulled me in too. The gaming section covers more ground than I expected, with both lottery products and a full casino lobby.
The casino side runs on games from Pragmatic Play, NetEnt, Red Tiger and a handful of others. Sweet Bonanza and Gonzo’s Quest sit in the popular section, although it does not compete with dedicated casino platforms on volume. The real draw is the lottery product: you can bet on the outcome of dozens of international lotteries, and the jackpot sizes can be staggering. Scratchcards and quick games fill out the rest.
The introductory bonus at Lottoland depends on where you are: typically a discounted first bet on a lottery draw. Casino bonuses appear occasionally, but the lottery offers are the main thing. Current promotions and terms are worth checking on lottoland casino since they rotate regularly. Playthrough on the casino side is in the standard range.
Minimum deposit is low: a pound gets you into a draw, ten for the casino. The usual cards plus PayPal are accepted. Cashouts via e-wallet took under twenty-four hours, card payouts took a bit longer. Verification was straightforward — uploaded a driving licence and a bank statement, done in a few hours.
Mobile works through a dedicated app, which is well designed and runs smoothly. Draw results appear as they happen, and the casino games play fine on mobile too. Customer service responds on chat, replies come within a few minutes. Licensed by the Gibraltar Gambling Commissioner and UK Gambling Commission, which gives proper regulatory backing. Overall a solid platform.

I have been playing on Rolletto since late spring, so the initial novelty has worn off. Came across it while comparing promo codes, since I wanted somewhere that combines casino and sports without fuss. The game library here is bigger than I expected, although I rotate between a handful of favourites.
Providers include the usual suspects: Pragmatic Play, NetEnt, Play’n GO, Hacksaw and Red Tiger. Sweet Bonanza and Gates of Olympus are in the top row, though I spend most of my time on high volatility slots. Evolution powers the live section, which means twenty-four hour coverage with English and Spanish speaking dealers. Sportsbook is there as well, a nice extra for those who like to mix it up.
The starting promotion at Rolletto is a multi-stage offer: a combined match of around 1500 euros with spins on top. Playthrough is forty times the bonus amount, which is on the higher side but not extreme. Updated bonus terms and any active promotions can be checked on rolletto promo code 2026 since terms change regularly. There are reload bonuses every week, meaning ongoing value if you stay active.
You can start from as little as ten euros. Traditional payment methods are accepted, though Bitcoin and the alt coins are where Rolletto shines: a dozen different coins. Crypto cashouts came through within hours, fiat payouts were slower as expected. Verification was painless — the whole thing was over in twenty-four hours.
On mobile I use the browser version and performance is solid. No app to install, which honestly I prefer. The chat team is available around the clock and wait times are short. Regulation is Curacao based, which is worth knowing before you sign up. The main thing is withdrawals have never been refused.
Been using Rolletto Casino for roughly half a year, enough time to see the real picture. A colleague mentioned it, because my old bookmaker took ages to pay. The catalogue at Rolletto runs well into the thousands, though I personally stick to maybe twenty titles.
The software side is well covered: Pragmatic Play, NetEnt, Play’n GO, Hacksaw and Red Tiger. Book of Dead and Reactoonz sit near the top, though I spend most of my time on high volatility slots. Live casino runs through Evolution, meaning the standard roulette, blackjack and baccarat tables plus the wheel games. There is a full sports section alongside the casino, which is convenient if you do both.
The sign-up bonus here is a multi-stage offer: a combined match of around 1500 euros with spins on top. Wagering is 40x on the bonus, standard for a crypto-friendly casino. Updated bonus terms and any active promotions are worth verifying at rolletto casino before you deposit. There are reload bonuses every week, which keeps things interesting after the first deposit.
Minimum deposit is 10 euros or equivalent in crypto. Card payments work, although the crypto options are the quickest route: BTC, ETH, USDT and several others. Withdrawals landed same day with crypto, bank transfers ran a few days longer. Document check took a single attempt — the whole thing was over in twenty-four hours.
I play on the phone via the site and load times are quick. There is no native app, which honestly I prefer. Support responds in English on live chat and they are more helpful than most. Licence is Curacao, which is worth knowing before you sign up. The main thing is withdrawals have never been refused.
Been using this casino for about five months now, so I have a decent feel for how things work. Came across it while comparing promo codes, mainly because I was looking for a platform with fast cashouts. The catalogue at Rolletto is bigger than I expected, though I personally stick to maybe twenty titles.
Providers include the usual suspects: Pragmatic Play, NetEnt, Play’n GO, Evolution for live tables and Big Time Gaming for Megaways. The popular titles are all present, but the Megaways section is what keeps me coming back. Live casino runs through Evolution, which means twenty-four hour coverage with English and Spanish speaking dealers. Betting on football and tennis is another option, handy for match days.
The welcome package here spreads across several deposits: up to 1500 euros plus 150 free spins. Wagering is 40x on the bonus, a bit steep but manageable with the right games. The live codes for this month are worth verifying at rolletto promo code since terms change regularly. Reload offers and free spin drops come through often, which keeps things interesting after the first deposit.
You can start from as little as ten euros. Card payments work, but the real strength is crypto: Bitcoin, Ethereum, Litecoin, Tether and more. Crypto cashouts came through within hours, fiat payouts were slower as expected. KYC went smoothly — the whole thing was over in twenty-four hours.
On mobile I use the browser version and load times are quick. No app to install, so no storage concerns. Support responds in English on live chat and wait times are short. They operate under a Curacao licence, which is worth knowing before you sign up. What matters is the money arrives when you ask for it.

I play on the phone via the site and it works well. You do not need to download anything, so no storage concerns. Live chat replies within a few minutes and wait times are short. Licence is Curacao, which is worth knowing before you sign up. Bottom line, payouts have always come through.

I use the mobile site on my phone and performance is smooth. You play through the site, so no download required. Customer service is available around the clock and wait times are short. Regulation is Curacao based, meaning no UK Gambling Commission oversight. The main thing is withdrawals have been honoured.
