Indulgence Revived | Marshmallows, Part I
Posted by Bria under Baking

I grew up dancing. Ballet at age 5 led to ice skating at 7, which led to creative dance at 9. After a year in open enrollment classes, I auditioned for Children’s Dance Theatre, a beautiful and amazing company at the University of Utah made up of 200 dancers ranging in age from 8 to 18. It was a place to learn, to grow, and most of all, to dance. I cherished every minute.
One of our regular performance avenues were lecture demonstrations – lec/dems, as we called them – at elementary schools around the state. A small group of dancers would travel to a school in the early morning, rehearse briefly, and perform condensed versions of the previous season’s full-company concert. It was an exercise in adapting, in transforming our full-scale productions into something that could look good in a cafeteria amidst row upon row of transfixed grade-schoolers sitting cross-legged on a sticky, linoleum floor. Sometimes, if you were unlucky enough to dance at your own school, it was a lesson in humility as you tried to avoid eye contact with anyone who had mileage to gain from this unitard-clad existence of ours.
At the end of each performance, we would pantomime filling our mouths with giant marshmallows before throwing the same imaginary marshmallows into the audience. With our cartoonish puffed cheeks, we urged the audience members to follow suit. It was a favor to the teachers; you can’t talk with your cheeks full of marshmallows. The hope was that a critical mass of kids from each class would be so enchanted with the mere idea of marshmallows that they would play along and follow their teachers back to the classroom in velvety silence, rather than unleash the wellspring of their previously suppressed energy.
Every time I eat or even think about marshmallows today, I think of those imaginary ones. I still marvel that the trick worked so well. The very suggestion of a marshmallow – a very simple combination of sugar, vanilla, and gelatin – was enough to coax all but the most jaded elementary students to suspend their disbelief and play along. Simple as they may be, marshmallows are a sort of wondrous kid magic. Sweet, spongy, and overwhelmingly throwable, they beckon to both the young and young at heart with their overt mirth.
I don’t know why I decided to make my own. It seemed like such a bizarre thing to render at home – aren’t they an ingredient, not an end in and of themselves? I was surprised at how very simple they proved to be. And how an array of freshly cut marshmallows simply screams “dress me” to those so inclined. The results are intensely satisfying – a backstage pass to one of the best components of a child’s dietary dream. Though delicious in their pure, unadulterated form, the well-accessorized marshmallow transcends the trappings of childhood and becomes a truly adult indulgence.
Vanilla Marshmallows
Adapted from Brownie Points
Makes approximately 40, depending on how you cut them
4 packets unflavored gelatin (find this in the baking aisle)
1 ½ cups water, divided into two ¾-cup units
1 T vanilla extract
3 cups granulated sugar
1 ¼ cups corn syrup
½ t salt
Equipment and experience note:
This is a recipe that really requires specific equipment. I would not attempt to make it without a stand mixer, as you will have a difficult time adequately mixing while incorporating the hot sugar mixture. And while the 10 minutes of high-speed mixing may not tear your arm out of its socket, you might wish it had. Also critical are a candy thermometer (instant read is best here) and a pan suitable for candy-making. I prefer enameled cast iron for its heft and straight sides, but there are other choices. Whenever you make candy, you need a very heavy, tall-sided pan that will heat evenly and leave enough room for bubbling without posing a danger to you and your skin.
Please also wear shoes and long pants whenever you make candy on the stove. It takes an otherwise small accident with boiling sugar to cause serious burns. If you use the proper equipment and don’t horse around, you should be fine, but you should foreclose the possibility of candy burns on your feet and legs. If, heaven forbid, you ever spill hot candy on yourself, get in the bathtub or shower and douse yourself in cold water as fast as you can.
Combine the vanilla and ¾ cup of water in the bowl of a stand mixer fitted with a whisk attachment. Sprinkle in the gelatin and let it stand while you boil the sugar mixture.
Combine the sugar, corn syrup, salt, and ¾ of water in your candy-suitable pan and cover with a lid. Bring to a boil without stirring. Once boiling, remove the lid and monitor carefully until it registers 235 on a candy thermometer (this is soft-ball stage – meaning a small dollop in a dish of cold water will form a soft ball). Carefully transfer the sugar mixture to something from which you can easily pour.
Turn the mixer to medium and begin slowly drizzling the sugar mixture down the side of the mixing bowl until it is fully incorporated. Crank the mixer to high speed and set a timer for 10 minutes.
While the mixer is doing its thing, line a 9×13 baking dish with parchment paper. Spray with vegetable oil.
At the end of 10 minutes, the funky, brown mixture you once had in your mixer will have transformed into billowing clouds of shiny, gorgeous marshmallow cream. Pour/scoop it into the prepared pan and smooth the top with an offset spatula. Leave it uncovered at room temperature for 10 to 12 hours until it has fully set.
Mix equal parts powdered sugar and rice flour into a small bowl. Sprinkle this mixture over a large cutting board as well as the top of the marshmallow block. Invert the pan onto the cutting board so your marshmallow block emerges. Remove the parchment and sprinkle with the powder mixture, smoothing with your hands to ensure an even coat.
Use a knife or a pizza cutter to cut the marshmallows into your desired shapes – I went with strips that I then cut into squares. Be sure to tap each freshly cut side into a bit of the powder mixture (otherwise the marshmallows will stick to themselves). You can also use cookie cutters to create more exciting shapes. Whatever you use to cut them, be sure to wash and dry the cutting edge every few cuts – this will prevent build-up and will give you a cleaner edge. Store at room temperature in an airtight container or large ziplock bag.
Stay tuned for a caramel recipe and other ideas for dressing up your beautiful little flock of springy joy.

في مطورين محترمين زي Pragmatic Play و NetEnt و Play’n GO. بحب ألعب Gates of Olympus و Sweet Bonanza، وكمان في Book of Dead لما يجي مود المخاطرة.
من الشركات الكبيرة عندك Pragmatic Play و NetEnt و Play’n GO. أنا بميل ألعب Gates of Olympus و Sweet Bonanza، وكمان في Book of Dead لما يجي مود المخاطرة.

Pragmatic Play ليها نصيب الأسد وكمان NetEnt وPlay’n GO.
Right — been using this thing for maybe six months now and it’s stuck on my phone, reckon I’d say something since a lad on another thread asked me the other day. Am in the UK, mainly do football and horses, nothing mad, just so you know where I’m coming from.
The reason I started using it was honestly embarrassing — I couldn’t ever figure out what an ew payout actually came to once you get five places instead of three. Basically I’d guess and then be surprised. Now punch the numbers in before every slip, even a straight one-selection punt.
Their single bet calculator is the one I open most — you drop in the price and your stake and it shows the return straight away, fractions or decimals. It also handles the multiples — doubles and trebles maths, a lucky 15, a yankee, and that’s where I’d always got it wrong. If you fancy a poke about, it’s here how many bets in a lucky 15 and there’s no login wall, which I appreciated.
One thing that genuinely changed how I bet were the nerdier tools. There’s an probability thing and it makes obvious how much the bookie’s taking, and a kelly criterion calculator — I stick to fractional kelly because full kelly is far too aggressive. Dutching calculator is handy too when I’m splitting a race.
Couple of gripes. The interface looks very functional, let’s say — not much polish, looks like it was built by someone who cares more about maths than colours. On mobile it’s fine though the bigger tables need a bit of scrolling. There’s no proper app, it’s a website and that’s it — fine by me but you asked.
Anyway. Costs nowt, not plastered in adverts, does the job. If anyone honestly does the maths on paper, try it — saves me a fair few dumb bets I’d have regretted.
OK — been using this thing for about four months now and I keep coming back, so thought I’d write something up since someone asked me a few days back. I’m UK based, generally bet football and racing, a fiver here and there, so take it how you like.
The reason I started using it was genuinely pretty stupid — I couldn’t ever figure out what an ew payout actually came to once you get five places instead of three. I’d just guess and get a shock. Now type the odds in first, every time, even the boring singles.
The single bet calculator tool is the one I’m on daily — you put in your stake, the odds and it spits out profit and total return instantly, fractions or decimals. There’s also the fiddly ones — acca and treble maths, lucky 15 and lucky 63, a yankee, honestly that’s where I always mess it up. Have a go yourself, it’s over at odds converter betting and there’s no login wall, which I appreciated.
The thing that genuinely changed how I bet were the nerdier tools. The implied probability converter and it makes obvious what margin’s baked in, plus a kelly tool — I run quarter kelly since full stakes are terrifying. Dutching calculator is decent for when I’m covering two or three runners.
It’s not perfect mind. Its interface feels very functional, let’s say — no polish, which honestly I don’t mind but some will. On my phone it’s usable though the acca grid make you pinch and zoom. And no app, it’s browser only — slight shame but you asked.
So yeah. Costs nowt, no ads shoved in your face, works. If you honestly does the maths on paper, have a look — saves me plenty of “wait, that’s it?” moments.

OK — been on this thing for about five months now and I keep coming back, so thought I’d chuck my thoughts in since a mate asked me a few days back. Am UK based, mainly do football and horses, a fiver here and there, so take it how you like.
How I found it was actually a bit daft — I couldn’t ever get my head round what an e/w return actually was when the place terms changed. I’d just wing it and then be surprised. Now I stick my stake in before every slip, even a straight one-selection punt.
The single bet calculator is the part I use most — you drop in your stake, the odds and you get the return instantly, either odds format. It also handles the multiples — trebles returns, lucky 15 and lucky 63, a yankee, honestly that’s where I always got it wrong. Have a go yourself, it lives at matched bonus bet calculator and it’s free with no account nonsense.
One thing that genuinely made a difference is the nerdier extras. They’ve got an odds-to-probability converter that shows the overround, plus a kelly staking calculator — I use half kelly because full kelly is terrifying. Dutching calculator gets used a fair bit when I’m covering two or three runners.
It’s not perfect mind. The design looks pretty plain — zero frills, it’s clearly function over form. On my phone it works although the acca grid need a bit of scrolling. And nothing on the app store, just the site — slight shame just flagging it.
So yeah. Doesn’t cost anything, not plastered in adverts, does the job. If anyone even now does the maths on paper, give it a go — saves me a load of dumb bets I’d have regretted.

Pragmatic Play ليها نصيب الأسد ووطبعًا NetEnt وPlay’n GO.

What got me on it was honestly embarrassing — I could never get my head round what an each way payout would be once you get five places instead of three. I’d just eyeball it and moan when the payout landed. Now punch the numbers in first, every time, even a straight one-selection punt.

The thing that really changed how I bet was the geekier extras. So yeah. Costs nowt, barely any ads, does what it says. Anyone who honestly works out returns on a calculator app, give it a go — it’s saved me plenty of arguments with the bookie.

بالنسبالي بقعد أطحن في Gates of Olympus، وواحد صاحبي مش بيسيب Book of Dead.
OK — have been messing about with this thing for about four months now and it’s basically bookmarked at this point, so figured I’d write something up since someone asked me last week. Am based in the UK, generally stick to footie and the horses, a fiver here and there, just so you know where I’m coming from.
What got me on it was actually a bit daft — I couldn’t ever get my head round what an e/w return would be when the place terms changed. I used to just guess and then be surprised. Now punch the numbers in first, every time, even the boring singles.
Their single bet calculator tool is the part I use most — you put in your stake, the odds and you get returns with no faffing, fractions or decimals. There’s also the bigger stuff — doubles and trebles maths, lucky 15 and lucky 63, a yankee, honestly that’s where I’d always lose track. If you want a look, it’s here overround calculator and there’s no login wall, which I appreciated.
One thing that actually made a difference were the more serious extras. The odds-to-probability calculator which shows you what margin’s baked in, and there’s the kelly tool — I run quarter kelly since full stakes are terrifying. The dutch tool is decent if I’m covering two or three runners.
Couple of gripes. The layout feels a bit basic — zero polish, which honestly I don’t mind but some will. On mobile it’s usable although the lucky 63 breakdown are a squeeze. Also there’s no proper app, it’s browser only — fine by me but worth saying.
Right, that’s me. Doesn’t cost anything, no ads shoved in your face, does what it says. If you honestly works out returns on a calculator app, give it a go — saves me plenty of “wait, that’s it?” moments.
Right — have been messing about with this thing for something like six months now and it’s basically bookmarked at this point, reckon I’d chuck my thoughts in since a lad on another thread asked me last week. Am in the UK, generally stick to footie and the horses, a fiver here and there, just so you know where I’m coming from.
How I found it was genuinely embarrassing — I never could get my head round what an ew payout would be when the place terms changed. Basically I’d guess and then be surprised. These days I punch the numbers in before every slip, even a straight one-selection punt.
The single bet calculator is the one I use most — you put in your stake, the odds and you get profit and total return with no faffing, fractional or decimal, doesn’t matter. Same tool covers the multiples — doubles and trebles returns, lucky 15 and lucky 63, a yankee, honestly that’s where I’d always lose track. If you fancy a poke about, it lives at how to work out each way bets and there’s no login wall, which I appreciated.
The thing that genuinely made a difference were the nerdier extras. There’s an implied probability converter and it makes obvious how much the bookie’s taking, plus a kelly staking calculator — I use half kelly as the full version is terrifying. The dutch tool is handy too for when I’m splitting a race.
Not all sunshine though. Its interface looks very functional, let’s say — not much flash, which honestly I don’t mind but some will. On my phone it’s fine but the lucky 63 breakdown need a bit of scrolling. And nothing on the app store, just the site — slight shame but you asked.
Right, that’s me. Doesn’t cost anything, barely any ads, does what it says. If you even now adds it up in their head, try it — it’s saved me plenty of “wait, that’s it?” moments.
