Cowboy Quiche, For Which I Am Truly Sorry
Posted by Bria under Baking, Main Dishes

I apologize in advance for the extent to which you will crave this cornbread when you finish the first batch. It started out innocently enough. As so often happens to me, yesterday I read the word “cornbread” and had to incorporate it into dinner. I don’t know why that happens – it’s like a fleeting idea of a particular dish will flip a switch in my brain and all of a sudden I am hungry for something I didn’t realize I wanted. It’s fine when this happens with foods for which I have the necessary ingredients; not so much when I start jonesing for pan-seared foie gras.

So cornbread. I started jazzing up cornbread a few years ago with diced apples and barbecue sauce – also delicious – and got really hooked on the idea that cornbread can take the main stage as an entrée rather than stay on the side dish sidelines. I thought the savory trio of the onions, bacon, and cheese here would nicely complement the sweetness of the cornbread. I didn’t really anticipate that the flavors would come together in a storm of perfection to create something I would end up dreaming about last night as I laboriously digested a third of the pan in my sleep (after intending to eat an eighth…oops).
There is cornbread and there is cornbread. This is the latter.
Cowboy Quiche
Serves…several, if you aren’t greedy; two if you’re like me and can’t stop eating this stuff
1 medium yellow or white onion
2/3 cup bacon crumbles (see note)
1 cup grated gruyere cheese
2/3 cup sugar
1 t salt
1/3 cup softened butter
1 T bourbon (can substitute vanilla – if you do, use 1 t)
2 eggs
2 cups AP flour
1 T baking powder
¾ cornmeal
1 1/3 cups buttermilk
Salt
Pepper
Olive oil
Preheat the oven to 400 degrees
This recipe works really well with a 10” cast iron skillet. You can use it to caramelize the onions, then grease it up and use it again to bake the cornbread. If you don’t have a cast iron skillet, you can use an 8×8 baking dish (and you should really just go buy a cast iron skillet, as they are fantastically useful and really inexpensive).
Cut the onion with the grain. If you don’t know what that means, watch the first two minutes of this video, then come back. It’s an idea that’s far easier to understand if you watch someone do it. Heat a tablespoon of olive oil in a skillet over medium-high heat until it shimmers. Add the onion, stir to coat with the oil, and season with salt and pepper. Keep them cooking while you get everything else ready, stirring occasionally. They will turn translucent, then soft, then they will begin to brown.
In a medium bowl, mix the sugar, bourbon, salt, and butter until it looks creamy. You can do this by hand – no need for a mixer. Add the eggs and stir well until they are fully incorporated.
In another bowl, combine the flour, baking powder, and cornmeal. Add approximately 1/3 of this dry mixture to the batter and stir well. Add approximately 1/3 of the buttermilk and stir again. Alternate the dry and wet ingredients until everything is combined. This is a technique you’ll see fairly often in batter-based baked goods.
Fold in the bacon, cheese, and onions. Stir gently, just until everything is evenly distributed. Spray the skillet with oil and fill it with the batter. Smooth the top with a spatula and bake for 20 minutes.
When it’s done, it will be beautiful and golden on top. A toothpick inserted in the center will come out mostly clean – if it isn’t clean, check to see if it looks like batter or cheese. If you happen to stick it in a pocket of cheese, it will come out looking gooey even though the thing is done!
Slice and serve warm. Reheat leftovers (if you have any) in a 350-degree oven.
Notes
About the name – so I’m being a little cute here. Make the recipe and take your first bite. Notice how the rich onion flavor blends with the smokiness of the bacon and the tang of the gruyere. See how it looks like a quiche in the pan, round and golden. And picture yourself eating it around a campfire on the prairie. Then giggle, because Cowboy Quiche is silly and alliterative, but still tastes good.
About the bacon – I buy cooked, crumbled bacon in 2 lb bags from Costco. It’s great to keep in the fridge, ready for whenever the bacon mood strikes. If you don’t have this, you can certainly cook up a few slices of bacon and crumble them into the batter. Barring that, I think a bit of sausage or Canadian bacon would also be lovely.

A piece that demonstrated competence without performing it, and a look at pakistanpulse maintained the same self assured but unshowy register, the gap between competence and performance of competence is one I track and this site has clearly chosen to demonstrate rather than perform which I find much more persuasive as a reader.

Appreciate the practical examples, they made the abstract points easier to grasp, and a stop at riverroutey added more of the same, this site clearly understands that real examples beat empty theory every single time which is the mark of a writer who knows their audience well and respects their time.

A modest masterpiece in its own quiet way, and a look at fitfuelfjord confirmed the same quiet quality across the rest of the site, calling something a masterpiece is usually overstating but for content this carefully crafted the word feels appropriate even if the writers themselves would probably resist the label honestly.

Now wishing more sites covered topics with this level of care, and a look at sipandsupply extended that wish across more subjects, the rarity of careful coverage on most topics is a problem and this site is one of the small antidotes to that broader pattern of casual or surface treatment of complex subjects.
Now adjusting my mental model of how the topic fits into the broader landscape, and a look at urbanunison extended that adjustment, content that affects my structural understanding rather than just my factual knowledge is content with deeper impact and this site is providing those structural updates at a meaningful rate consistently across topics.
Really liked the calm tone running through the post, no shouting and no urgency forced into the writing, and a look at fiorenzaa kept that quiet confidence going, the kind of voice that makes the reader feel respected rather than yelled at which is depressingly common across most modern blog content these days.
Thanks for laying this out in a way that someone newer to the topic can follow, and a stop at skynvanta kept that accessibility going, writing that meets readers at different experience levels without condescending is hard to do well and the writers here have clearly thought about who they are writing for.
Top quality material, deserves more attention than it probably gets, and a look at brewbrooks reflected the same effort across the site, a hidden gem in the modern web where most attention goes to whoever shouts loudest rather than whoever actually delivers the best content for their readers without much marketing fanfare.
If you scroll past this site without looking carefully you will miss something, and a stop at blog44through extended that mild warning, the surface of the site does not advertise its quality loudly which means careful attention is required to recognise what is being offered here which is itself a kind of editorial signal.

The clarity here is something I really appreciate, especially compared to sites that pile on jargon for no reason, and a look at woolwarehouse was the same, simple direct sentences that actually deliver information instead of dancing around the point for paragraphs at a time which wastes reader patience.

A piece that reads like it was written for me without claiming to be written for me, and a look at kidkismet produced the same fit, when the writer audience match clicks naturally without being engineered through demographic targeting you know the writing is solid and this site has that natural fit consistently for me.
Worth recognising that this site does not chase the daily news cycle, and a stop at worldshipper confirmed the longer publication arc, sites that resist the pressure to comment on every passing event are sites with genuine editorial discipline and this one has clearly chosen depth over volume which I respect deeply.

Approaching this site through a casual link click and being surprised by what I found, and a look at samplesunrise extended the surprise, the rare experience of stumbling into excellent independent content rather than predictable mediocrity is one of the actual remaining pleasures of casual web browsing and this site provided it cleanly.
The headings made navigating the post simple even when I needed to find a specific section quickly, and a look at remoteranch continued the same thoughtful structure, small details like clear headings show that someone is actually thinking about how the reader uses the page rather than just filling it for length alone.
Refreshing to read something where the words actually mean something instead of filling space, and a stop at cybershieldshop kept that going, the writing here trusts the reader to follow along without endless repetition or constant reminders of what was already said earlier in the post which I appreciate.
Just sat with this for a bit longer than I usually would because the points are worth thinking about, and after sendersanctuary I had even more to chew on, the kind of post that nudges your thinking forward without forcing the issue is something I have always appreciated in good writing online.
Felt the writer was being honest with the reader which is rare enough that I want to acknowledge it, and a look at vizwave continued that honest feel, content built on actual knowledge rather than aggregated summaries is something I value highly and rarely come across in regular searches on the open internet these days.
Now sitting back and recognising that this was a small but real win in my reading day, and a stop at parcelpoppy extended that quiet win, the cumulative effect of small reading wins versus the cumulative effect of small reading losses is real over time and this site is contributing to the wins side of that ledger.

Now adding the writer to a small mental list of voices I want to follow, and a look at phonerepairpro reinforced that follow intention, the few writers whose work I actively track are writers who have demonstrated sustained quality and this writer has clearly demonstrated that sustained quality across the pieces I have sampled here today.
A genuine pleasure to find a site that publishes at a sustainable cadence rather than chasing the daily content treadmill, and a look at cashcompass confirmed the careful publication rhythm, sites that prioritise quality over frequency are rare and this one has clearly chosen the slower pace which I appreciate as a reader.
I learned more from this short post than from longer articles I read earlier today, and a stop at corewebvitals added even more useful detail without going off topic, this site clearly knows how to keep things focused without sacrificing depth which is a hard balance to strike for any writer.
Felt the writer was speaking my language without trying to imitate it, and a look at domainward continued that natural fit, when a writers default voice happens to match what you find easy to read the experience feels frictionless and that is something I notice and remember about specific sites going forward.
Liked the way the post handled the final paragraph, no neat bow but no abrupt cutoff either, and a stop at riceridge continued that thoughtful ending pattern, endings are hard and most blog writers either over engineer them or skip them entirely and this site has clearly figured out a sustainable middle approach.
